INGREDIENTS
The Crust
- 3/4 cup coconut flour
- 1/4 cup erythritol
- 1/2 tsp of salt
- 1/2 tbsp of coconut oil
- 2 whole eggs
- 6 tbsp butter
- 1/2 tsp vanilla extract
The Filling
- 1 tsp vanilla extract
- 2 eggs
- 1/4 cup erythritol
- 2 tbsp butter
- 1/2 cup sugar free maple syrup
- 1/2 cup Legendary Foods Pecan Pie Almond Butter
- 1 cup of chopped pecans
METHOD
- Start with the crust and mix the coconut flour, erythritol and salt together in a bowl.
- In a separate bowl, mix the coconut oil, eggs, butter and vanilla extract.
- Slowly add in the dry ingredients to the wet ingredients bowl, and mix until they form a dough.
- Grease a pie pan and evenly press the dough around the edges of the pan and into the bottom.
- bake the pie crust for 10 minutes at 350 degrees and then let the crust cool.
- Next, cover your crust with the chopped pecans.
- In another bowl, mix all of the filling ingredients together with a whisk.
- Pour the filling mixture over the pecans and pie crust.
- Bake for 45-50 minutes at 350 degrees and then let the crust cool.
